Recipe:(makes 6 crumbl sized cookies)
Ingredients:
Cookies:
1/2 cup butter
1/2 cup brown sugar
1/4 cup white sugar
1 egg
1 3/4 cups flour
1/2 tbsp cornstarch
1/2 tsp baking soda
1/2 tsp salt
1/2 tbsp white sugar
1/2 tsp cinnamon
Frosting:
1/4 cup butter at room temp
4 oz cream cheese at room temp
1 1/2 cups powdered sugar
Steps:
Preheat the Oven: Set your oven to 350°F (175°C).
Cream the Butters and Sugars: In a stand mixer, (or by hand) combine butter, brown sugar, and white sugar. Mix for 2-3 minutes until fluffy.
Add Egg: Add eggs to the mixture, then mix again until well combined.
Dry Ingredients: Add in flour, cornstarch, baking soda, and salt. Mix until just combined.
Prepare Cinnamon Sugar: In a small bowl, mix cinnamon and sugar.
Form the Cookie Dough: For large cookies, scoop 1/2 cup of dough and roll it into a ball. Roll each ball in the cinnamon sugar mixture to coat completely.
Bake: Place up to 6 dough balls on a standard cookie sheet, slightly flattening them. Bake for 9-11 minutes until they look set and may still be a bit soft in the center. Allow cookies to cool completely.
Make the Frosting: While the cookies cool, prepare the frosting by mixing butter and cream cheese until combined. Add powdered sugar, and mix for another 2 minutes. To get completely smooth frosting, beat with the paddle attachment in a stand mixer for an extra 2 minutes.
Frost: Pipe the frosting onto each cooled cookie and sprinkle with extra cinnamon sugar.
