Crumbl Copycat Red Velvet Cupcake Cookies:

Imagine the perfect balance of soft, chewy cookie dough with a crumbly, buttery topping—infused with that signature tangy red velvet flavor we can’t resist. Topped with a swirl of creamy cream cheese frosting and a sprinkle of red velvet crumbs, these cookies are everything you love about the classic cake, packed into a sweet, irresistible bite. Let’s get baking and turn these beauties into a show-stopping treat!

Recipe:(makes 6 crumbl sized cookies)

 

Ingredients:

Cookies:

  • 1/2 cup butter softened

  • 1/2 cup brown sugar

  • 1/4 cup white sugar

  • 1 egg

  • 4-5 drops red food coloring (more or less depending on how strong your food coloring is)

  • 1 1/4 cups flour

  • 1/4 cup cocoa powder

  • 1/2 tbsp cornstarch

  • 1/2 tsp baking soda

  • 1/2 tsp salt

Frosting:

  • 1/4 cup butter at room temp

  • 4 oz cream cheese at room temp

  • 1 1/2 cups powdered sugar

 

Steps:

  1. Preheat the Oven: Set your oven to 350°F (175°C).

  2. Cream the Butters and Sugars: In a stand mixer, (or by hand) combine butter, brown sugar, and white sugar. Mix for 2-3 minutes until fluffy.

  3. Add Egg: Add eggs and food coloring to the mixture, then mix again until well combined.

  4. Dry Ingredients: Add flour, cocoa powder, cornstarch, baking soda, and salt. Mix until just combined.

  5. Form the Cookie Dough: For large cookies, scoop 1/2 cup of dough and roll it into a ball. Set on the tray and flatten slightly. Take about a tablespoon of the dough and flatten it completely. Bake the tablespoon of dough for 2 minutes and then crumble it.

  6. Bake: Bake for 9-11 minutes until they look set and may still be a bit soft in the center. Allow cookies to cool completely. The cookies might look a bit underdone but it is done. They will look better when it sets.

  7. Make the Frosting: While the cookies cool, prepare the frosting by mixing butter and cream cheese until combined. Add powdered sugar, and mix for another 2 minutes. To get completely smooth frosting, beat with the paddle attachment in a stand mixer for an extra 2 minutes.

  8. Frost: Pipe the frosting onto each cooled cookie and sprinkle with the cookie crumble.
