With the cold weather FINALLY settling in here in California, it’s the perfect time to cozy up with a bowl of comforting Tuscan pasta. This dish is all about warming flavors and hearty ingredients that make you feel right at home. It's tender creamy pasta with perfectly cooked chicken—just the kind of meal that wraps you in a cozy hug. So, grab your favorite pot, and let’s dive into this delicious Tuscan pasta recipe with a twist that will warm you up and satisfy your cravings on those chilly evenings!
This recipe makes enough for 6 servings.
Ingredients:
Chicken:
1 lb chicken strips
1 tsp Italian seasoning
1 tsp garlic salt or regular
1 tsp black pepper
2 tbsp olive oil
1 tsp vinegar
1 tsp soy sauce
Sauce:
2 tbsp butter
1 tsp minced garlic
1/4 cup sun-dried tomatoes
6-7 chopped cherry tomatoes
1 tbsp Italian seasoning
1/2 tsp salt
1 cup milk
1 cup mozzarella
2 tbsp flour
Pasta:
1/2 pack of linguine pasta (or any other really)
some cilantro and cherry tomatoes to garnish
red chilli flakes to garnish
Steps:
Boil the Pasta: Boil the linguine according to the package instructions in a pan. Drain the water, and set aside.
Cook the Chicken: Season the chicken with garlic salt, Italian seasoning, vinegar, soy sauce, and pepper. Heat oil on a pan and cook the chicken strips on high heat till they change color. Then, cover it with a lid and let it cook for 15 minutes, before moving them from the stove. Set aside and cut into smaller pieces if you want.
Satue: Add the butter in the same pan (the one in which you cooked the chicken) and saute the garlic.
Satue More: Add in the tomatoes (both), salt, and Italian seasoning. Satue until it smells amazing and the tomatoes have softened.
Cream It: Add in the flour and milk and stir until it thickens. Add in the cheese and stir some more.
Combine It: Add the chopped spinach, chicken, and pasta to the sauce. Mix on low heat until well combined.
Garnish: Garnish with chopped tomatoes, red chili flakes, and some cilantro.
Serve: Serve straight out of the pan. Can be eaten alone or with garlic bread for a fully cozy autumn meal!!!
