These cookies are the perfect mix of crispy edges and gooey centers, packed with melty chocolate chips that are just heavenly. Whether you’re baking for a crowd or just treating yourself (no judgment here!), these cookies are bound to be a hit. Let’s dive in and create some deliciousness together!
Recipe:(makes 20 small cookies)
Ingredients:
10 tbsp butter
2/3 cup brown sugar
1/4 cup sugar
1 egg
1 1/4 cup flour
1/2 tsp cornstarch
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp instant coffee
a pinch of salt
1 cup chocolatete chips (semisweet)
1/3 cup chocolate chunks (dark or milk)
Steps:
Brown the Butter: In a saucepan, melt the butter over medium heat, stirring frequently. Continue cooking until it turns golden brown and smells heavenly (about 5-7 minutes). Make sure it does NOT burn. Remove from heat and let it cool slightly.
Mix Sugars and Eggs: In a large mixing bowl, combine the brown sugar, granulated sugar, and browned butter. Mix. Add the eggs and whisk until smooth.
Combine Dry Ingredients: Now, baking soda, baking powder, cornstarch, coffee, and salt. Add the flour until just combined. If you overmix the cookie will become cakey and dry and the dough will be hard.
Add Chocolate Chips: Fold in the semi-sweet chocolate chips until evenly distributed. Do not overmix or the chocolate will melt.
Chill the Dough: Scoop out tablespoon-sized portions of dough and place them on a parchment-lined baking sheet, spacing them about 2 inches apart. Add in the chocolate chunks on top. Refrigerate for at least an hour or overnight. (There is a BIG difference b/w chilled and not chilled dough. If you don't have time just chill it for 15 minutes, but DO NOT skip the step completely.)
Bake: Preheat your oven to 350°F (175°C). Bake for 15 minutes, or until the edges are golden and the centers look slightly underbaked.
Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Or just eat them straight out of the oven.
